CURED MUZZLE AND HEAD OF PORK (SOPRASSATA)
- It is a typical product of the centre of Italy. The meat is simply boiled, chopped up, flavoured
- and put into sacks of 5 to 40 kilos. The product is then put aside to cool so as to make it harden.
- it can be eaten simply sliced and is characterized by an intense scent and an unmistakable
- moderately spiced taste.
